Chicken Salad Grilled Cheese Deluxe

A great way to use leftover chicken! Makes 2 sandwiches

Ingredients:

• 4 slices white bread

• 2 Tbsp. mayonnaise

• 1/3 cup shredded or diced chicken

• 1/2 tsp blue monde seasoning

• 1 Tsp jalapeno or habanero peppers

• 4 slices either mozzarella or provolone

Directions:

In a bowl mix together mayo., chicken, spices and peppers; spoon onto unbuttered 2 slices of unbuttered sides of bread, top with cheese, close and cook 3-4 minutes
